Pau is located in the rear of a small shopping center, behind Merriman’s Restaurant in Waimea on the Big Island. Reviews we read on all those other sites out there give this place the highest marks, so fortunately for you, you’ve come to the PizzaSnobo for the real slice.
First, we want to say how much we wanted this place to be great. From all the strong, but misguided reviews and the good vibe of the place, we wanted to call Pau home. But then we tasted the one-size only, $17 “cheese” pizza and we realized that many reviews are far off the mark.

A very white and thick mozzarella cheese covers the top, our first indication we were in for a disappointment. Ironically, the stringy mozz is what we disliked the least here. The crust is not really that thin as many of the reviews claim. It is ¼” thick, too dense and without any crispness, except around the edge. The biggest killer though is the sauce, which in our opinion should be forbidden “kapu.” The sauce is so sweet and overpowering that we aren’t sure if what we ate was actually pizza.

Stay away from the pizza here. Go with a salad or treat yourself to Merriman’s for some onolicious Hawaiian style food instead.
